RECIPE COURTESY OF ANDY VIOLA
PHOTOS BY TAMMY HARROW

One of the most popular desserts at Viola’s is what Andy Viola calls the “When Harry Met Sally” dessert…and for good reason.

He explains: “A couple years, ago one of our servers was going over our dessert menu to one of our female guests when the woman noticed another woman at a table across from her receive a dessert. As the first lady was trying to make up her mind, the one already enjoying her dessert was literally moaning in delight with every bite. Naturally, the moaning was a bit distracting and the first woman kept looking over at the other, then closed the dessert menu and said ‘I’ll have whatever she’s having!’”

VIOLA’S WHEN HARRY MET SALLY CHEESECAKE

From that day forward, we’ve called it the ‘When Harry met Sally’ Fried Cheesecake because the customer’s reactions so closely resembled the scene from the movie.”

INGREDIENTS:

  • 1 SLICE NEW YORK STYLE CHEESECAKE
  • FILO DOUGH SHEET
  • 1 EGG BEATEN
  • CORN STARCH
  • POWDERED SUGAR
  • CINNAMON
  • CHOCOLATE SYRUP
  • CARAMEL SYRUP
  • BANANAS
  • SEASONAL FRUIT
  • VANILLA ICE CREAM

Sprinkle corn starch on a sanitized work surface. Lay down one sheet of filo dough on surface. Place a slice of New York cheesecake toward one edge of the sheet. Brush the ends of the filo dough with enough eggwash to help the filo dough stick to the cheesecake. Slowly wrap the filo dough over the cheesecake and keep rolling and tucking the filo until you get to the other edge of the filo dough. Remember to add egg wash whenever needed to help the filo dough stick together, especially towards the end. When completed wrapped, roll the filo-wrapped cheesecake in corn starch. Repeat the process with as many slices of cheesecake as you want. Place on plate so that slices don’t touch and refrigerate overnight. When ready to cook, heat a deep fryer to 350 degrees. When ready, slowly drop the filo-wrapped cheesecake for 1-2 minutes till golden brown. Place cheesecake in powdered sugar and toss gently. Sprinkle lightly with cinnamon. Place on plate with a scoop of vanilla ice cream, drizzle with chocolate and caramel syrup. Garnish with banana slices and seasonal fruit of your choice.

And let the moaning begin!
